Quick and Easy Dinner: Bruschetta Chicken

Dinner time!  This recipe comes from Chalean Extreme, the program I'm currently doing.  I absolutely love this nutrition guide--it's like a cookbook!  So many great recipes, all of them very quick, and I love that she does them for one serving, so you can double, quadruple, whatever you need to do!

Bruschetta Chicken
1 serving
Ingredients
4 oz. chicken
1 t onion powder
1 t chili powder
1 plum tomato
1 garlic clove, minced
1/2 t dried oregano
1 t olive oil
 
Season chicken with onion powder and chili powder and cook in a non-stick skillet over medium heat.  Cut up tomato and put in a bowl with garlic, oregano, and olive oil.  When chicken is cooked, top with tomato mixture and serve!  I served mine with the zucchini bake from Fixate, but you can have any vegetable.
