Quick and Easy Lunch: Salad with Tuna

This is yet another very simple, quick dish that you could have for lunch or dinner.  You can easily change the protein from tuna to whatever you'd like:  hard-boiled egg, chicken, steak.  Plus, you can make the salad your own by adding in whatever vegetables you like and have around!

Salad with Tuna
1 serving




Ingredients
4 oz. canned tuna (solid white in water)
2-3 large lettuce leaves, torn into small pieces (you could also use spinach or other greens)
1/4 c cucumber
1/4 c bell pepper
1/4 c beets
3-4 pepperoncini
balsamic or red wine vinegar for dressing

Put everything together in a bowl and eat!  I serve with 1 c of fruit to have a complete balanced meal.
